Sins of the South Cake

1 pound golden raisins
1 cup Southern Comfort
1 pound pecans -- 1 quart
1 cup butter
2 cups sugar
6 large eggs
3 1/2 cups flour, all-purpose
2 teaspoons baking powder
1 teaspoon salt

Soak raisins in bourbon overnight.

Preheat oven to 325-degrees. Grease and line bottom of 10-inch tube pan (or 2 small tube pans, or one small and one mini pan).

Cream butter and sugar. Gradually add one egg at a time, beating well after each addition. Add flour sifted with baking powder and salt. Add raisins and pecans, mixing well. Pour into prepared pans.

Bake at 325 for 1 1/2 hours for tube pan, less time for smaller pans. Cool
cake on rack.

After cooling, wrap cake in cheesecloth soaked in Southern Comfort and place in airtight container. Will keep for several weeks.

Sounds delish. But I think I just realized that... well, are you in Savannah? I lived in /on St Simon's Island for eight yrs, and went to Savannah all the time. Savannah... the Garden of Good and Evil.

Oh I LOVE LOVE LOVE Savannah but no, I don't live there. Just absolutely fell in love with it after the book and movie, and visited there. My dream is to retire there and live in one of the beautiful restored historic houses!

The Grandma of a boyfriend I had forever ago lived on St. Simon's Island! We visited her there once, absolutely a lovely place.

hey, maybe you guys will have this recipe, sadly, my mother passed away and we can't find it:

It's called a 7-egg cake...All I know for sure, is that 7 eggs are in the recipe.

I haven't forgotten about your 7-egg cake. It wasn't in the recipes I've transferred to this computer and I haven't had time to go through my hard copies. I just hope it wasn't in my recipe file I had on my old computer that got "fried".
