Boy! that didn't take long. Here's a good one and it was a big favorite. Warhorse had posted it and we ended up calling it Warhorse's Brown Sugar Chicken.
Brown Sugar Chicken
1 to 1 1/2 pounds deboned chicken, cut into pieces
1 cup packed brown sugar
1/2 cup vinegar
1/4 cup 7-Up
3 tablespoons minced garlic
2 tablespoons soy sauce
Place chicken pieces in crockpot. Mix all ingredients and pour over chicken. Cook on LOW for 6-8 hours.
Served over rice or noodles.

CREAM CHEESE CROCK POT CHICKEN
Another Chicken Recipe

4-5 boneless skinless chicken breasts, cut in pieces
2 tbs melted butter
salt and pepper to taste
1 pkg dry Italian seasoning mix (Good Seasons)
1 can cream of chicken soup
1 8 oz brick of cream cheese, cut in cubes
1/2 c chicken broth
1 large onion, chopped
crushed garlic to taste
Brush chicken with melted butter and sprinkle with the dry Italian seasoning mix, all over, all sides.
cover and cook on low 6-7 hours.
About 45 min. before done, brown the onion in butter and then add the cream cheese, soup, and chicken broth to the saucepan. Add the crushed garlic and stir all ingredients till smooth. Add salt and pepper.
Pour sauce mixture over chicken in the crock pot and cook an additional 30-45 min. or more. Remove chicken to platter and stir sauce before putting in gravy boat. Pour over chicken and rice or noodles.
Note: I have recently discovered Jasmine Rice and LOVE LOVE LOVE IT! We had this chicken over Jasmine rice and I thought I died and went to heaven.

Seriously, though, we like it too. I tried it with some pork steaks instead of chicken one night and that was good too.

Shredded Barbecue Chicken
4 large boneless skinless chicken breasts
1 1/2 cups ketchup
3 tablespoons brown sugar
1 tablespoon worcestershire sauce
1 tablespoon soy sauce
1 tablespoon apple cider vinegar
1 teaspoon crushed red pepper flakes
1/2 teaspoon garlic powder
8 buns
Place chicken breasts in the crockpot and cook on high until done, a couple of hours. Take breasts out and shred the meat.
Stir together all the sauce ingredients. Add the shredded chicken and heatin the crockpot on low an hour or so.
Serve on buns.
I got this one from Recipezaar, one of my favorite recipe sites. I changed the directions just a tad bit to make it easier to understand.
Here was my "review" of this recipe:
PHENOMENAL! I loooove this recipe! I normally don't like shredded chicken barbecue sandwiches; I'm strictly a pork barbecue lover, but this recipe sure turned that around. Totally awesome. Crushed red pepper flakes is one of my favorite ingredients...I think that and the vinegar just made this recipe for me. VERY authentic barbecue flavor. 5 stars!

Seriously, though, we like it too. I tried it with some pork steaks instead of chicken one night and that was good too.

2 lb pork baby back ribs
1 tsp. ground black pepper
2 1/2 cups barbecue sauce (not mesquite flavored)
1 jar (8 oz) cherry jam or preserves
1 Tblsp. Dijon mustard
1/4 tsp salt
1. Trim excess fat from ribs if any and rub 1 teaspoon pepper over the ribs. Cut ribs into 2-rib portions; place in crock pot.
2. Combine barbecue sauce, jam, mustard and 1/4 teaspoon salt in a small bowl; pour over ribs.
3. Cover; cook on LOW 6 to 8 hours or until ribs are tender.
Season with additional salt and pepper if desired.
Serve Ribs with sauce
Serves: 4
With the weather turning cooler this is a perfect time to use a crockpot for soups, stews, chilis etc.

Crockpot Pizza Soup
1 (16 ounce) can crushed tomatoes (can use stewed or whole)
2 (16 ounce or 1 –32 oz) cans beef broth (can sub bouillon)
2 (16 ounce or 4-8 oz) cans mushrooms (can use fresh if desired)
1 medium green pepper, diced
1 small onion, diced
1 lb Italian sausage
1/2 lb pepperoni, thinly sliced
1 teaspoon garlic powder
2 teaspoons dried oregano
2 teaspoons Italian seasoning
1 cup freshly grated mozzarella cheese
1/4 cup grated parmesan cheese
Sauté the sausage until brown. Drain grease from the sausage and place the sausage in a crockpot.
Add all the other ingredients (except the cheeses) to crockpot. Cook in slow cooker on low for 6 to 8 hours.
Spoon into bowls and sprinkle with cheeses.
Serves 6 to 8.

3/4 lb. boneless lean pork, cut into 1" cubes
1 can (15 oz.) Great Northern beans, rinsed and drained
1 can (14 oz.) chicken broth
1 lb. fresh tomatillos, husks removed, rinsed, coarsely chopped
1 large onion, halved and thinly sliced
1 can (4 oz.) diced mild green chilies, undrained
6 cloves garlic, chopped or sliced
1 tsp. ground cumin
Salt and black pepper
1/2 cup lightly packed fresh cilantro, chopped
Garnishes:
Sour cream
Sliced jalapeños
1. Spray large skillet with nonstick cooking spray and heat over medium high heat. Add pork; cook until browned on all sides.
2. Combine cooked pork and all remaining ingredients except cilantro and sour cream in a crock pot/slow cooker. Cover and cook on HIGH heat setting for 3 to 4 hours.
3. Season to taste with salt and pepper. Gently press pork against side of the crock pot/slow cooker with wooden spoon to shred. Reduce heat to LOW. Stir in cilantro and cook for 10 minutes more.
Serve with sour cream and sliced jalapeños.
Makes: 4 servings.

A couple Christmas' ago we bought a Rival Crockpot BBQ Pit.
OMG!! I'm sure you southerners will laugh your butts off at the northerner, but this thing makes THE best ribs, ever. The bones come right out and since they don't lay around in the juices from regular crock pot cooking, the sauce bakes right in.

If you buy one, the insert is a PITA to clean, spray it with Pam before using each time, that helps a lot! But boy, the ribs are worth it!

This family is filled with BBQ fiends. My BIL and I are sorta friendly rivals at BBQ IF you equate BBQ with cooking on a grill that is.... and we cook pretty much everything, with the exception of baking a cake which I'd still like to try one day, on a grill.
Here at my house I have two stand-alone charcole grills, one with a smoke box on the side and a gas grill (seldom used) and a small, table-top grill.
At my BILs, there is a stand-alone grill with the side smoke box, a vertical smoker and a couple of table-top grills.

My kids are very picky eaters. I've found one dish that they love and its so easy.
I put in chicken pieces (usually whatever's on sale) with salt, pepper, garlic powder, and cover with water. Cook, and shred the meat. Then add back to the pot and add whole grain spagetti noodles. Cook them till tender. The kids eat it up and its great on a cold rainy day or if they're feeling puny.

Sauce on! That's what makes the pit so great! They come out perfect!
Good ribs make you need a shower afterward, ya know what I mean? :girl_haha:

hiya claudia! all these recipes sound grrrreat!!
i've got one that's just your basic meat-n-taters.....nuttin fancy...it's SO easy...i used to do this at least once a week.....
CROCK POT PORK CHOPS W/ TATERS, CARROTS & ONIONS
pork chops- (you can use regular or the thin breakfast chops)
taters- (i use the red ones) about 5 or 6 small to med, just sliced in half; i leave the skin on
carrots- i use a bag of baby carrots just cos it's easier..but you can chop your own of course
onion- one medium
cream of mushroom soup- (or cream of celery) 2 cans (the recipe only calls for 1 can..but i like to put 2 for more "juice")
put a layer of taters on bottom of crock pot, then a layer of carrots, then onions, and put pork chops on top (browned first) dump in your cans of soup (condensed, no water) add in salt, pepper, garlic etc whatever you like for seasoning cook on low for 6-8 hrs or high for 4 hrs....it's DEE-lish...you can't screw it up!!
*btw, i posted this one on one of our chat threads a while back, and the ppl who tried it absolutely loved it!

1-1/2 lb. fresh-frozen fish fillet
1/4 lb. bacon, diced
1 medium onion, diced
1/2 - 3/4 cup chopped green onion tops
2 - 3 potatoes, peeled and cubed

to taste - salt, pepper
1 can (13 oz.) evaporated milk
Directions
Cut fish into bite size pieces, lightly brown bacon and onions;drain. Combine all ingredients in crockpot, cover and cook on Low 6 -9 hours, or High 2-1/2 - 3-1/2 hours. Add milk last 1/2 hour.
Makes 8 servings.
Note: for variety or more add cubed carrots, chopped celery.

From my experience you can hardly ruin chicken cooked in a crock pot. This recipe is from WendyRN.
Wendy's Yummy Chicken
1 pack chicken thighs, skinless and all the fat cut off
1 small bag fresh mini carrots
1 pound fresh mushrooms, sliced
1 can Cream of Chicken & Mushroom Soup
1 can Low Fat Chicken Gravy
1 package saffron rice
2 tbsp butter
Layer carrots along bottom of crock pot.
Brown the chicken in butter and layer it on top of the carrots. Add sliced mushrooms between layers of chicken. Deglaze pan with COCM soup and chicken gravy. Pour over chicken. cook on low for 8 hours or on Hi for 4 hours.
During the last hour, add package of saffron rice and let it cook.

Nanny's Southern Green Beans
1/2 cup water
2 pounds green beans (fresh or frozen)
3 slices of Salt Pork
4 med potatoes, peeled and cubed
Salt
Brown the salt pork just a tad in a skillet. Place potatoes on bottom of crock pot. Add green beans and salt pork, stirring to mix them up.
Pour in 1/2 cup water and add salt to preference.
Serve with hot cornbread and sliced tomatoes, cucumbers and onions and you got yourself a southern feast.
ETA: I just noticed she didn't post how long to cook, but I'd think on low it would take 4-6 hours.

Crock Pot Jambalaya
1 lb chicken breasts or tenders, boneless. Cut into 1 inch cubes.
8 to 12 oz. smoked sausage, sliced.
1/2 cup chopped onion
1 green bell pepper, chopped.
1 large can (28 oz) crushed tomatoes
1 cup chicken broth
1/2 cup dry white wine
2 tsp. dried leaf oregano
2 tsp. dried parsley
2 tsp. Cajun seasoning.
1 tsp. cayenne pepper
1 lb. shrimp, cooked
2 cups raw rice, cooked
Combine chicken, sausage, bell pepper and onion in crock pot. Add tomatoes, chicken broth, wine, oregano, parsley, Cajun seasoning and pepper and stir gently.
Cover and cook on LOW for 6 to 8 hrs. or HIGH for 3 to 4 hrs. About 30 to 45 minutes before serving, add shrimp and cooked rice and heat thoroughly.

Broccoli Rice & Chicken
2 pounds uncooked chicken
1-1/4 cups uncooked converted rice
1 can Cream of Broccoli Soup
1 1/2 cups chicken broth
pepper, to taste
Place rice in a lightly greased crockpot.
Sprinkle with parsley and pepper.
Top with chicken pieces.
Mix together the soup mix and broth.
Pour over chicken and rice.
Cover and cook on low for 6 to 8 hours.

Crockpot Chocolate Delight
1 package Chocolate Cake Mix
1 cup Sour Cream
1 cup Chocolate Chips
1 cup Water
4 large Eggs
3/4 cup Vegetable Oil
1 package Instant Chocolate Pudding & Pie Filling Mix
Warm in crockpot and you can pour over
Vanilla Ice Cream

Here's a similar recipe Pat;
Crockpot Cake
1 cake mix, any brand any flavor
1 small box instant pudding; use the same flavor as the cake
12 ounces sour cream
4 eggs
3/4 cups oil
1 cup water
Spray inside of crackpot with nonstick cooking spray. Mix all ingredients together and pour in crockpot. Cook on low for about 6 hours. Turn crockpot off and let sit for about 1 to 2 hours. Then you can flip it out onto a plate. If you do not let it cool long enough before taking it out of the crockpot half of it stays in the crock.

2 c flour
1-1/2 c sugar
1 tsp baking soda
1/4 tsp salt
6 tbsp cocoa powder
1 egg
1 c mayonnaise
1 c hot water
1 tsp vanilla
Sift together: flour, baking soda, sugar, salt & cocoa. Add egg, mayo, water & vanilla & beat on medium with electric mixer until well blended. Spread evenly in a slow cooker insert.
Bake in covered crock pot on high3 hours or until cake tests done.
Serves 6.
This one doesn't say to use the paper towels under the lid, but I think I would to keep the steam from dripping.

Pat, try this icing recipe with that chocolate cake...it is to die for.
Peppermint icing:
* 2 cups confectioners' sugar
* 1 tablespoon nonfat milk
* 1 teaspoon unsalted butter, softened
* 1/4 teaspoon vanilla extract
* 1/8 teaspoon peppermint extract
* 3 (4 inch) candy canes, finely crushed
To prepare the icing, combine the confectioners' sugar, milk, butter, and vanilla and peppermint extracts in a medium bowl, stirring until smooth and adding a little water if needed, 1 teaspoon at a time, to make a spreadable consistency. Here's a similar recipe Pat;
Crockpot Cake
1 cake mix, any brand any flavor
1 small box instant pudding; use the same flavor as the cake
12 ounces sour cream
4 eggs
3/4 cups oil
1 cup water
Spray inside of crackpot with nonstick cooking spray. Mix all ingredients together and pour in crockpot. Cook on low for about 6 hours. Turn crockpot off and let sit for about 1 to 2 hours. Then you can flip it out onto a plate. If you do not let it cool long enough before taking it out of the crockpot half of it stays in the crock.

Pat, try this icing recipe with that chocolate cake...it is to die for.
Peppermint icing:
* 2 cups confectioners' sugar
* 1 tablespoon nonfat milk
* 1 teaspoon unsalted butter, softened
* 1/4 teaspoon vanilla extract
* 1/8 teaspoon peppermint extract
* 3 (4 inch) candy canes, finely crushed
To prepare the icing, combine the confectioners' sugar, milk, butter, and vanilla and peppermint extracts in a medium bowl, stirring until smooth and adding a little water if needed, 1 teaspoon at a time, to make a spreadable consistency. Fold in the crushed peppermint pieces then spread on the cooled cake.
That does sound good. I'll have to try it.
My mother used to make a chocolate fudge-like icing for me when I was a kid. It was a cooked icing and it's really tricky to make.... like making fudge from scratch. ...and she didn't have a candy thermometer either.
It would firm up on the cake and if even slightly over cooked, it'd crack when you sliced into the cake but ooooooh was it good.

Yep, made it last night. I keep a ziploc bag in the freezer and throw most leftover veggies in there. I made a roast (in the crockpot) Sunday, and cut that up, added my bag of veggies, an extra bag of corn, a head of cabbage I had put up from the garden, some seasonings and a jar of canned tomato juice. Dinner ready for tonight......
I think I will find that corbread recipe to go with it....:022:

I'll share my cornbread recipe. My family begs for it.
2 cups of corn meal (not self rising)
3 tablespoons of all purpose flour
1 tsp of baking soda
1 1/2 tsp salt
1 beaten egg
1 1/2 cups buttermilk
3 tablespoons oil
Mix dry ingredients the add the egg and buttermilk. You may have to add a little more milk to get the consistency just right. It should be thinner than pancake batter.
Put the oil in an iron skillet and heat the skillet on the stove top. Or if you are using a baking pan, heat the pan in the oven. Pour the batter into the pan and bake at 425 degrees for 20 minutes or until the bottom is browned. Turn on broiler until the top of the bread is golden.

i've got one that's just your basic meat-n-taters.....nuttin fancy...it's SO easy...i used to do this at least once a week.....
CROCK POT PORK CHOPS W/ TATERS, CARROTS & ONIONS
pork chops- (you can use regular or the thin breakfast chops)
taters- (i use the red ones) about 5 or 6 small to med, just sliced in half; i leave the skin on
carrots- i use a bag of baby carrots just cos it's easier..but you can chop your own of course
onion- one medium
cream of mushroom soup- (or cream of celery) 2 cans (the recipe only calls for 1 can..but i like to put 2 for more "juice")
put a layer of taters on bottom of crock pot, then a layer of carrots, then onions, and put pork chops on top (browned first) dump in your cans of soup (condensed, no water) add in salt, pepper, garlic etc whatever you like for seasoning cook on low for 6-8 hrs or high for 4 hrs....it's DEE-lish...you can't screw it up!!
*btw, i posted this one on one of our chat threads a while back, and the ppl who tried it absolutely loved it!

You can always cook a meatloaf in the crock pot. I did that when I worked and it was ready for supper. Just mixed it up the night before and threw it into the crock before going to work. Low all day, best I remember. Probably according to your crock.

Wow.....I bought the exact same crock pot for DS and DIL for Christmas. That's what they wanted because of their hectic schedule. She uses hers almost everyday.

I made a Pot Roast in my slow cooker today. Prepared just like for the oven.
The only thing I did differently is to brown the Roast on each side. (5 min each side) It was delicious and fell completely apart.

Crock Pot Sweet Saucy Ribs
This one was posted by Topsail Girl.
2 lb pork baby back ribs
1 tsp. ground black pepper
2 1/2 cups barbecue sauce (not mesquite flavored)
1 jar (8 oz) cherry jam or preserves
1 Tblsp. Dijon mustard
1/4 tsp salt
1. Trim excess fat from ribs if any and rub 1 teaspoon pepper over the ribs. Cut ribs into 2-rib portions; place in crock pot.
2. Combine barbecue sauce, jam, mustard and 1/4 teaspoon salt in a small bowl; pour over ribs.
3. Cover; cook on LOW 6 to 8 hours or until ribs are tender.
Season with additional salt and pepper if desired.
Serve Ribs with sauce
Serves: 4
OMGosh, fixed this crock pot meal yesterday and it was out of this world.

Also, I covered my ribs and baked in oven for 45 min on 325 before adding to crock pot. Cut my crock pot cooking time to 4 hours.

Thaw sauce mix and combine with about 2 cups of water. Put the bag of potatoes in fridge until needed. Put sauce and contents of bag in crock pot. Cook for 8 hrs slow or 4 on high. Add potatoes last 35 minutes. I forgot my potatoes last time so I zapped in the microwave a few minutes first. I usually have rice and biscuits and that is it, unless specified by DH.
Leftover are left in crock pot with water added, cooked on warm or very low until following day. Then I open several cans of veggies and have soup. Last time I used succotash, tomatoes and okra, corn, and a couple more potatoes. I have added any beans or peas from freezer. If I have a 1/2 cup of beans leftover at supper I throw them in a zip lock bag and toss in freezer for soup. Only requirement here is okra and corn for DH. I have thrown a handfull of chopped cabbage in. Sometimes I cook macaroni to add as wanted. I love mac in mine. And rice. Anything that doesn't move gets tossed into the pot. Then cornbread is a must!
